I am using hueman theme and on mobile the sign up list from my side bar appears all the way on the bottom after the post. so, in a spot that most people won't really see or notice.Â
I'd like to have it in a better spot on mobile - is there a way that I can do that?

Yes, that's because the sidebar is always below the main content on mobile. All themes are like that because if you think about it, the main content needs to be displayed before the sidebar content.
You'll always get fewer email subscriptions from mobile users no matter what you do, but there are some things you can do to increase them.
For example:
Use a mobile-friendly popup. You can create these with autoresponder services such as Aweber or OptinMonster.
Add a signup form within the content on some of the posts.
